Vegan Chocolate Brownies

Chocolate Covered Katie's Original Recipe

Ingredients

  • One 15 ounce can black beans, or 1 and 1/2 cups of your own.
  • 1/2 cup quick oats (oatmeal)
  • 1/2 teaspoon baking powder
  • 2 tablespoons cocao powder
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 teaspoons vanilla extract
  • 1/3 cup dark chocolate chips or chunks, plus some more for topping.

Directions

  • Preheat oven to 350°.
  • Drain and rinse black beans.
  • Combine all ingredients except chocolate chips/chunks in a food processor.
  • Blend until smooth. Seriously, blend the heck out of it.
  • Evenly stir in 1/3 cup of chocolate chips/chunks into your blended batter.
  • Thoroughly grease an 8 inch by 8 inch baking pan (I use a glass Pyrex one).
  • Pour the blended batter into the pan. Smooth it out so it's flat.
  • Optionally: sprinkle extra chocolate chips/chunks on top.
  • Slide the brownies in the oven for 15-18 minutes. I generally put them in for 18 minutes.
  • This step is important! Take them out and let them cool for 10 minutes.
